Although they can be used like any other root vegetable (roasted, mashed, in stews, etc.), rutabagas add a great earthy, almost floral flavor to any dish. They are a hybrid between cabbage and turnips with a taste often compared to carrots or potatoes. Because of their firmer, crunchier nature, they hold up beautifully in long stews but can also be peeled and enjoyed raw!
