Rich, sweet, and tart, this filling is exceptionally well balanced, making it guaranteed home run at family picnics and spring grill gatherings. Just follow the baking instructions for your dough, add the pie filling, chill, and enjoy!

We recommend:
  -Top with fresh whipped cream or meringue and garnish with ribbons of lemon zest
  -Top with berries for added color
  -Finish with dark chocolate whipped cream (trust us) and garnish with toasted coconut shavings

Ingredients:

Lemon Filling Ingredients: cane sugar, water, eggs, lemon juice, 
corn starch, butter, salt

Pie Dough Ingredients: butter, flour, sugar, salt

Gluten Free Pie Crust Ingredients: rice flour, organic palm shortening, potato starch, tapioca starch, water, organic powdered sugar (organic cane sugar, organic tapioca flour), vinegar, egg replacer (potato starch, tapioca flour, leavening [*calcium lactate, calcium carbonate, cream of tartar] cellulose gum, modified cellulose) xanthan gum, salt

Pie Instructions:

*You will need 1 egg white

1) Thaw filling and preferred pie dough
2) Preheat oven to 375°F
3) Roll out cold dough to line 9" pie pan and chill (or, if you're using pre-made gluten-free pie shells from Pie Jacked, follow the directions on the packaging)
4) To par-bake shell: line dough filled pie pan with parchment (pro-tip: crumple paper first to fill in the nooks and crannies); fill shell with dry beans and bake on bottom shelf 20-30 minutes until mostly golden, turning halfway through; remove beans and parchment; brush shell with lightly whisked egg white and pop back in the oven for 5-10 minutes to finish (the egg white allows the crust to stay crispier over time, you can omit this step if eating right away)
5) Allow crust to cool; stir thawed filling and add to crust
6) Chill; top with homemade whipped cream or meringue and ENJOY
