From a young age Anthony and Gerdardo, the founders of The Salumeria, were surrounded by the tradition of meat butchery and curing. As they had families of their own, the craft of making salami transitioned from a romantic idea to the greatest adventure of their lives.  

Family traditions and generations-old recipes have inspired their farm-to-charcuterie business. Their Italian cured meats begin at The Salumeria Farm where they pasture-raise and nurture pigs without the use of hormones or antibiotics on 200 acres of diverse land. The pigs are harvested and butchered, then hand-crafted into over 20 varieties of salami at a state-of-the-art, climate controlled facility in Dripping Springs. The result of The Salumeria's care and thoughtfulness results in high-quality, deliciously cured meats that really showcase the founders' lifelong passion.
