Hands on Time: 5 Minutes; Total Time: 15 minutes

GRILL INSTRUCTIONS

STEP 1 
Preheat your gas or charcoal grill to medium-high heat per manufacturer's instructions. Gently melt the compound butter in a small saucepan or in the microwave; keep warm.
STEP 2  Meanwhile, pat the thawed lobster tails dry with paper towels and set the lobster tails on a cutting board with the underside facing down. Starting at the top of the tail, cut a shallow, lengthwise slit down the center. Stop about 1 inch from the bottom of the tail fin and be careful to not cut all the way through. Press down gently on the opening to flatten. Thread a wooden skewer through the bottom of the lobster up to the top. Oil the lobster tails and season the lobster lightly with salt and pepper.
STEP 3  Grill over direct heat for 3 to 5 minutes per side or until just cooked through (145°F). Baste with butter. Serve with fresh lemon wedges.

BROIL INSTRUCTIONS

STEP 1 
About 1 hour prior to cooking, set the compound butter on the counter to reach room temperature.
STEP 2  Set the oven to broil. Pat the thawed lobster tails dry with paper towels and set the lobster tails on a cutting board with the underside facing down. Starting at the top of the tail, cut a shallow, lengthwise slit down the center. Stop about 1 inch from the bottom of the tail fin and be careful to not cut all the way through. Press down gently on the opening to flatten. Thread a wooden skewer through the bottom of the lobster up to the top. Season the lobster lightly with salt and pepper, then spread the room temperature compound butter in the flattened opening.
STEP 3  Set the buttered lobster tails on a baking tray and broil for 3-5 minutes or until just cooked through (145°F). Serve with fresh lemon wedges.
