This versatile party dip with elevated ingredients is a welcome departure from the preservative-laden options typically found at the store. Quick and easy to prepare in advance, the umami flavor just improves over time thanks to organic sundried tomatoes that add deep, concentrated tomato flavor in every creamy scoop. Customize the dip with your favorite cheeses to add tang and give an umami boost. Served cold or baked into a hot & cheesy dip with crackers, chips, bread or crudite, this take on artichoke dip is sure to be a party favorite. 

Serves 8. 

Includes:
  • 3 oz Sundried Tomatoes
  • 14 oz Organic Artichoke Hearts, Quartered
  • 8 oz Organic Cream Cheese
  • 1 bunch Organic Green Onions
  • 2 oz Farmhouse Kitchen All Season Salt
You will need:
  • Sour Cream (1/2 to 3/4 cup)
  • Semi-hard Cheese such as Gouda, Cheddar or Jack (1-2 cups, shredded)
  • Salt and pepper
  • 1-2 quart Baking Dish
Hands on Time: 15 minutes; Total Time: 45 minutes

INSTRUCTIONS

Note:
About 1 hour before preparing, set the cream cheese on your kitchen counter to each room temperature.

STEP 1 
If preparing as a hot baked dip, preheat oven to 350°F. Meanwhile, roughly chop the sundried tomatoes and add to a bowl. Add hot water just to barely cover the tomatoes and let sit while you prepare the remaining ingredients.
STEP 2  Thinly slice the green onions. Drain the artichoke hearts well, removing as much moisture as possible, then roughly chop. Set aside. 

STEP 3  In a large mixing bowl, add the room temperature cream cheese. Beat with a hand mixer or wooden spoon until smooth. Add 1/2 to 3/4 cup sour cream, 1 to 2 cups of shredded cheese, half of the sliced green onions and chopped artichokes. Drain the sundried tomatoes from the liquid as much as possible and add to the cream cheese mixture. Season with 2 tsp. All Season salt. Mix until thoroughly combined. Taste and season with additional green onions, All Season Salt, and black pepper. 
STEP 4  For a cold dip, cover with plastic wrap and let sit for at least 3 hours or overnight to let the flavors meld. Stir before serving. .
STEP 5  
For a hot baked dip, transfer the dip to a small cast iron skillet or baking dish. Bake in the oven for 25 minutes or until hot and bubbly around the edges, and brown on top. 

Serve with crackers, bread, chips and crudite. Enjoy!
