This Greek-inspired dish is a flavorful addition to your summertime dinner menu. Serves 4. 

Includes*:
  • 1 lb avg Wild-caught Gulf Shrimp, frozen
  • 8 oz Dried Orzo Pasta
  • 6 oz Goat Feta Cheese
  • 1 clamshell Grape Tomatoes
  • 1 Garlic Bulb
  • 1 Yellow Onion
  • 1 bunch Fresh Oregano
You will need:
  • Oil of choice
  • Salt & Pepper
  • White wine, chicken or vegetable stock, or water
  • Lemon juice & zest (optional)
Hands on Time: 15 minutes; Total Time: 25 minutes

INSTRUCTIONS

NOTE:
24-48 hours prior to cooking, place frozen shrimp in a bowl and thaw in the refrigerator.

STEP 1 
Prepare the orzo. Bring 3 cups of water to a boil. Add the orzo and a big pinch of salt. Stir and reduce heat to medium-high. Simmer orzo for 7-9 minutes or until al dente - when the pasta is cooked, but retains a pleasant chew. Drain the orzo, then return to the pan. Drizzle with oil and season with salt and pepper to taste. Cover to keep warm until ready to serve. Fold in fresh lemon juice before serving, if desired.

STEP 2  Meanwhile, prepare the vegetables & shrimp. Dice the onion into small pieces. Mince about 2 tsp. of garlic and thinly slice 3-5 cloves of garlic (to taste). Pick 4 tbsp. of oregano leaves and roughly chop. Halve the tomatoes. Set vegetables and herbs aside. Peel and devein the shrimp, then add to a bowl. Toss shrimp with finely grated lemon zest (optional), 2 tsp. of minced garlic, 1 tbsp. chopped oregano, salt and pepper; set aside.
STEP 3  Heat a large sauté pan over medium heat. Add oil and diced onions; season with salt. Sauté for about 4 minutes or until translucent and lightly browned. Add the tomatoes, sliced garlic, and oregano. Season with salt and pepper. Stir to combine and let simmer for 2 minutes or just until the tomatoes start to soften and release juices. Add 1 cup of white wine, stock or water. Let simmer uncovered for about 3 minutes to cook off the alcohol and reduce the liquid by about 1/3. Taste and adjust with salt and pepper, as needed. 
STEP 4  Reduce heat to medium-low and top the sauce with seasoned shrimp. Arrange in a pattern if desired. Cover with a lid and gently steam the shrimp for about 5 minutes or until cooked through, but tender. The shrimp will turn an orange-pink on the outside, while the meat will become opaque-white and the tails will curl inward. The internal temperature of the shrimp should reach 145°F.
STEP 5  Top the shrimp with crumbles of feta cheese, a drizzle of olive oil (optional) and a garnish of fresh oregano. Serve tomato & feta shrimp over orzo.
