This simple, 4-ingredient meal is ready to enjoy in under 20 minutes. Start with pan seared Sicilian chicken sausage links from Belle Vie Farms, hand crafted from local pasture-raised & harvested chickens, confit lemon and fresh thyme. Cherry tomatoes are cooked just until they burst, lending their sweet-tart juices to a light pan sauce infused with savory, caramelized chicken flavor. Serve the sausages and burst tomatoes over creamy locally made orzo pasta, swirled with Farmhouse Kitchen's basil pesto. 

Serves 4.

Includes*:
  • 1 lb avg, Sicilian Chicken Sausage Links, frozen
  • 8 oz Dried Orzo Pasta
  • 1 clamshell Cherry or Grape Tomatoes
  • 8 oz Basil Pesto
You will need:
  • Olive Oil
  • Salt & Pepper
  • Grated Parmesan, Romano or Asiago Cheese (optional)
Hands on Time: 15 minutes; Total Time: 20 minutes

INSTRUCTIONS

NOTE: Thaw chicken sausages in the refrigerator 24-48 hours prior to cooking.

STEP 1 
Prepare the orzo. Bring a medium sized pot of water to a boil over high heat. Add 2 tsp. of salt and the dried orzo to the boiling water. Immediately stir to separate and prevent sticking. Reduce heat to medium-high and cook orzo for 7-9 minutes or until tender, but pleasantly chewy. Reserve 1/2 cup of cooking water, then drain well in a colander, but do not rinse.
STEP 2  Return the hot orzo to the pot and fold in about 1/2 jar or 4 oz. of basil pesto (add more or less basil pesto to taste). Fold to combine and coat, adding a few tablespoons of reserved cooking water to loosen and form a creamy sauce, as desired. Season with olive oil, salt and pepper to taste.
STEP 3  While the orzo is cooking, prepare the sausages and tomatoes. Heat a skillet over medium with 1 tbsp. of oil. Add the chicken sausages and cook for about 8 minutes, flipping midway to brown both sides. Add whole or halved cherry tomatoes and 1/4 cup water. Stir with a wooden spoon to loosen caramelized bits from the bottom of the pan. Continue cooking for about 5 minutes or until sausages are cooked through and the internal temperature reaches 165°F, and the tomatoes soften and the skins burst. Season the tomatoes and sauce with salt and pepper to taste.

STEP 4  Serve the Sicilian chicken sausages and burst tomatoes over basil pesto orzo. Top with grated cheese, if desired.
