INSTRUCTIONS

Note: Thaw the chicken in the refrigerator 24-48 hours prior to cooking.

TEP 1  Prepare the vegetables. Slice the onions into 1/4-inch thick strips. Halve or quarter mushrooms depending on size. Pick, wash and dry basil leaves. Set aside.
STEP 2  Remove the skin from the chicken, if desired, then slice into small cubes, about 1-inch pieces. Set aside.
STEPHeat a large saute pan or wok over medium-high heat. Add oil to coat the bottom of the pan, about 1-2 tbsp. When the oil begins to shimmer, add the chicken and season with salt and pepper. Cook for 4-6 minutes or until just cooked through, reaching an internal temperature of 165°F. Transfer the chicken to a clean bowl using a slotted spoon. 
STEP 4  Add more oil to the saute pan if it appears dry. Then, add the onions and mushrooms. Saute for 3-5 minutes or until onions turn translucent and mushrooms are lightly brown. If incorporating other veggies, add them at this point and stir fry for 3-5 minutes until crisp tender.
STEP 5  Return the chicken and any juices to the pan. Add about 1/2 of the bottle (4 oz or 1/2 cup) of stir fry sauce. Stir to combine and bring to a simmer. Season with additional stir fry sauce, salt and pepper to taste. Turn off the heat and fold in the whole basil leaves until just wilted.
STEP 6  Serve the spicy basil chicken stir fry with rice, quinoa, over noodles or in a lettuce cup.
