OroBianco Italian Creamery's cheeses are made by the first and only water buffalo dairy in the state of Texas. Produced from 100% grass-fed water buffalo milk, Bufaletta is a fresh, semi-firm cheese similar to Greek-style feta, with sharp tang and a pleasantly briny and salty finish.

Tuscan Blend Bufaletta is a robust pairing of bite-sized cheese marinated with herbs and spices in Texas extra virgin olive oil.

Add Tuscan Blend Bufalteta to a charcuterie board alongside cured meats, pickles and fresh fruit. Bake it in the oven to transform it into a soft and creamy dip, and serve with warm bread. Fold it with cold pasta and roasted vegetables for a picnic-ready salad. Toss with oven roasted cherry tomatoes for a delicious creamy pasta sauce.

The herd of approximately 400 Mediterranean, Southeast Asian and South American water buffalo are proudly raised in the Hill Country and south Texas following ranching traditions that enhance the animals' well-being and sustain the soil. Thriving on a 100% grass diet without growth hormones or antibiotics, the water buffalo produce milk with a higher butterfat and more nutrients than typical cows' milk. The milk is transformed into gelato and Italian-inspired cheese produced by hand in Blanco, TX.
