If you didn't know better, you'd probably say Paula Lambert is the last person you'd find digging her manicured hands into a vat of curd. A refined Dallas lady, Paula has in fact put more than 25 years of hard work into her now well-established Mozzarella Company. After years of struggling to not only perfect her craft but also to convince people to eat her cheese, Paula is now reaping the rewards of being ahead of her time.   

Her passion for cheese started with the mozzarella she ate while studying Italian in Perugia. Distraught at being without it upon her return to Texas, she resolved to start making her own. After studying with Italian cheesemakers, she leased a small space in the artsy Deep Ellum district of Dallas. It still serves as her very cramped cheese factory today. Always looking to diversify, she has recently started to explore goat's milk cheese and the traditional cheeses of Mexico.
