Custom-mixed and blended for the perfect combination of flavor, structure, and tenderness in cookies, cakes, and pies this standard all purpose flour blend is a combination of TAM 114 and Sonora, sifted to ‘00.' 

TAM is a hard red wheat variety developed by Texas A&M in 1976, now widely considered open-pollinated. Our farmer, Ralph Hoelscher, has been growing this variety organically for more than 30 years. Sonora is one of the oldest surviving wheat varieties anywhere in North America. Predating Red Fife and Turkey Red wheat, it is a soft white, round winter wheat with pale red grains.

While earliest records document its existence in the mountain plains of Sonora, Mexico in the early 1700s, the wheat surely predates that era by generations. It was widely planted in California by the early 1800s.
