Creamy and decadent describes this delicious baked dip boasting a full pound of sweet lump crab meat. This crowd-pleasing showstopper will have your guests 'oohing' and 'aahing,' as they spread cheesy, crab-packed spoonfuls onto toasted Easy Tiger baguettes. The combination of 36 General's spicy aged cheddar pimento cheese dip, scallions, tangy cream cheese and fresh lemon zest and juice with sweet, wild-caught crab meat creates the most irresistible dip.   • 1 lb avg Wild-caught Lump Crab Meat
  • 8 oz Organic Cream Cheese
  • 8 oz Pimento Cheese
  • 1 bunch Green Onions
  • 2 ct Eureka Lemons
  • 1 Baguette
You will need:
  • Hand mixer or Stand Mixer (optional)
  • Salt and Pepper
  • Sour Cream
  • Hot Sauce (optional)
  • Worcestershire Sauce (optional)
Hands on Time: 10 minutes; Total Time: 35 minutes

INSTRUCTIONS

Note: Thaw crab in refrigerator overnight. About 1 hour before preparing, set the cream cheese on your kitchen counter to each room temperature.

STEP 1  Preheat oven to 375°F. Meanwhile, thinly slice the green onions and finely zest 1 lemon; set aside. Gently break up the crab into a small mixing bowl, feeling and inspecting for shells, as you go. Be careful to not break up large lumps of crab. Set aside.

STEP 2  In a large mixing bowl, add the cream cheese. Beat with a hand mixer or wooden spoon until smooth. Add 1/2 cup sour cream, the pimento cheese, 3/4 of the sliced green onions (reserve remaining 1/4 for garnish), the juice of the zested lemon and lemon zest. Season with 3/4 tsp. salt and pepper. Mix until thoroughly combined. Then, fold in the crab meat. Taste and season with additional salt, pepper, lemon juice, and a couple of dashes of hot sauce and/or Worcestershire sauce (optional).
STEP 3  Transfer the crab dip to a small cast iron skillet or baking dish. Bake in the oven for 25 minutes or until hot and bubbly around the edges, and brown on top.
STEP 4 
Slice the baguette into thin rounds. Add to a baking sheet and toast for 12 minutes or until lightly brown and crisp, turning mid way.
STEP 5  Garnish the dip with remaining sliced green onions. Serve hot on toasted sliced baguette with a squeeze of fresh lemon and a dash of hot sauce.
