Skirt steak is considered one of the most flavorful cuts of beef and, because there is only one inside and one outside cut per animal, it can be a rare find outside of restaurants.

Because the skirt has more connective tissue, it can have a  tough texture if not seared at a high enough temperature or if it's overcooked (keep it to temperatures medium and below). We recommend marinating the steak for at least a 30 minutes, up to overnight. This steak is fantastic in fajitas, on salads, or just as a main protein among other grilled meats and veggies.
