Osso Buco translates to "bone with a hole" in Italian. This portion comes from the beef shank and is cross cut into 1.25 inch sections with a marrow bone in the center. It's one of the best, most under utilized cuts on the entire animal. The beef shank has a lot of connective tissue because it does so much work for the animal, but this yields exceptionally tender, flavorful results with interesting textures when slow cooked until falling apart. It's also one of the most budget friendly cuts on the entire animal.
