Serves 4. Ground beef picadillo is a dish that's prepared in numerous ways across the globe. Farmhouse Kitchen takes inspiration from all of those countries, with a healthy addition of Texas grown sweet potatoes and carrots. The beef and vegetables are simmered in a house made sauce that is richly flavored with dried chiles, herbs, and spices. Served in warm stone ground corn tortillas and topped with pickled red onions.

Ingredients: Augustus Ranch Meat Co. Ground Beef, stone ground corn tortillas, sweet potatoes, carrots, pickled red onions (red onions, red wine vinegar, sugar, salt), Picadillo Sauce (tomato, red peppers, yellow onion, garlic chipotle pepper, oregano, cumin, apple cider vinegar, dried New Mexican chile pepper, dried guajillo chile pepper)

8 oz Farmhouse Kitchen Picadillo Sauce

You Will Need:
Salt and pepper
Canola, Olive, or Other Neutral-Tasting Oil

Active Time: 10 minutes
Total Time: 20 minutes

Instructions:


STEP 1  Prepare the vegetables. Peel (optional) the sweet potatoes and carrots. Chop into small dice, about 1/3" cubes. Set aside.

STEP 2  Add oil to a large skillet over medium-high heat. Add the ground beef and break up into small crumbles. Cook for 5-7 minutes until browned.

STEP 3  Add the diced sweet potatoes and carrots to the beef. Saute for 2-3 minutes, then pour in the picadillo sauce. Fill the sauce container about half way with water to collect any residual sauce and add to the skillet. Stir to combine. Reduce the heat to medium-low and simmer, uncovered, for 8-10 minutes or until the carrots and sweet potatoes are tender. The sauce should reduce by half.

STEP 4 Warm the tortillas in the oven or toast in a dry skillet until soft and pliable.

Serve the beef picadillo with warm tortillas and garnish with pickled red onions. Enjoy!
