The Denver cut comes from the most heavily marbled muscle in the entire body. Cut from the center of the shoulder, these steaks are extremely tender with a good amount of marbling and beef flavor. It’s immensely rich and intense in terms of flavor. Wagyu Excelente beef is 100% pasture-raised and hormone and antibiotic-free Wagyu cattle. Wagyu cattle are known for their incredible marbling, which leads to richer, fuller flavored meat with a higher monounsaturated fat ratio than in other beef with a lower impact on cholesterol levels.

As a shoulder cut, most Flat Iron Steak recipes work well for the Denver Steak. The Denver Steak is great when tenderized or marinated then grilled or pan seared. For a quick pan sear, tenderize and generously season your steak with salt, pepper, and spices of choice. Rest at room temperature for up to 1 hour. Drizzle oil in a pan over high heat and cook to medium-rare, about 4-5 minutes each side. Allow the meat to rest for 5 minutes. When serving, be sure to cut against the grain for optimal tenderness. Delicious when served with a chimichurri or romesco sauce.
