Pasture-raised bison is praised as a heart healthy, slightly sweeter alternative to beef. Bison sirloin is from the area of the animal between the ribs and the rump. This area of the bison is rarely used, making the cut tender and juicy.

Because bison is a much leaner meat than beef, you’ll still want to sear and finish in the oven to avoid the cut drying out. Season with salt and pepper, sear for 1 minute on each side in a cast iron, and finish in a 400F oven for about 15 minutes until the internal temperature of the steak reaches 140-145F for medium rare. We recommend cooking bison steaks to medium or below.
