Because bison is a much leaner meat than beef, you’ll still want to sear and finish in the oven to avoid the cut drying out. Season with salt and pepper, sear for 1 minute on each side in a cast iron, and finish in a 400F oven for about 15 minutes until the internal temperature of the steak reaches 140-145F for medium rare. We recommend cooking bison steaks to medium or below.
