Many years ago, after being diagnosed with exercise-induced anaphylaxis triggered by gluten, and learning of the limited options-gluten-free people had available to them, GFY owner and baker Tim Elias began experimenting with his own gluten-free flour blends. Once he perfected his proprietary gluten-free flour, he created recipes and a business plan to take over the world… (or at a minimum, the gluten-free community in Austin, TX). All GFY products are baked from their proprietary gluten-free, nut-free, rice flour blend and contain no preservatives, artificial ingredients, or cornflour. GFY bread is hearty, moist (not crumbly like some gluten-free bread you may have tried), and full of flavor. They're what gluten-free bread is supposed to taste like.
