Carolina Gold is an heirloom variety of long grain rice with superb taste and texture. This high quality rice is much more flavorful than the common table rice, with the unique characteristic that allows it to produce a range of textures - from fluffy, individual grains to creamy porridge, depending on how you cook it. Its versatility means it can be used interchangeably in recipes that call for medium or short grain rice.

In lieu of bomba and Arborio rice, add Carolina Gold to paella and risotto. Lean into tradition and cook up a batch of Perloo - a low country one-pot dish with origins in West Africa full of seafood, game and smoked ham or sausage.

With roots dating back to the 1690s, Carolina Gold is said to have arrived in the US by way of Madagascar when a ship stopped in Charleston, South Carolina for repairs and made payment in the form of rice. For generations, this unique varietal of rice has been grown and harvested in Anahuac, Texas, by the Kirkman and Wilcox families, following sustainable practices and conserving water to preserve habitat for local wildlife.

Ingredients: organic Carolina Gold white rice

Cooking Instructions:

2 cups water
1 cup rice
1 tsp. of salt (if desired)
1 tbsp. butter (if desired)

Rinse and drain the rice. Place water in a medium saucepan and bring to a boil. Add the salt and butter if desired, then the rice. Once the water comes to a boil, reduce the heat to low and cover the saucepan with a lid. Approximate cooking time is 18-20 minutes. If texture is still firm or liquid is still present, continue to cook, checking at two minute intervals. When done, uncover and fluff with a fork.
