Much like a young gouda, this cheese can be cut into cubes or slices and enjoyed with crackers or in cooked foods such as the filling for crepes or mixed with the eggs in an omelet.

Founded in 2016, Lira Rossa is an artisanal, family owned and operated, Italian creamery located right next to the milking parlor on the Four E Dairy farm in Moulton, TX.

Lira Rossa believes Italian tradition dictates good cheese is made with good local milk. The founder, Andrea Cudin, who runs the creamery with his wife, Jillian, hails from the Friuli Venezia Giulia region of North-Eastern Italy. Bordering Austria and Switzerland, this region's cheeses are unique in that they blend Italian cheesemaking traditions with those of Alpine creameries.

By combining the centuries of Old World tradition with milk from Texan Jersey cows, Andrea surely has the recipe for success cooked into all of Lira Rossa's cheeses.
