Heat oil in a skillet over medium-high heat and sear chicken thighs in batches until browned on each side and no longer pink in center (about 8 minutes each side, depending on thickness). Set chicken aside and simmer your sauce of choice in all the tasty juices - mushroom, tomato sauce, or white wine. Add thighs back into the pan and serve with whole grains or sauteed veggies.
