Hands on Time: 5 minutes; Total Time: 20 minutes

INSTRUCTIONS

STEP 1 
Peel the potatoes (optional) and chop into 1-inch cubes. Add to a pot and fill with water until it reaches about 1-inch above the potatoes. Season the water with 1 tbsp. salt. Bring the potatoes to a rapid boil over high heat, then reduce to medium-high to a gently boil. Cook for about 15 minutes or until the potatoes are easily pierced with a fork.
STEP 2  While the potatoes are boiling, finely chop the chives or slice them into larger pieces (1/4 to 1/2-inch in length), as desired. Reserve about 1 tbsp. for garnish.
STEP 3 
Drain the potatoes in a colander, then return them to the pot. Do not rinse potatoes.
STEP 4 
Add the chive cream cheese spread and gently mash to dissolve and incorporate the cream cheese into the hot potatoes. If desired, add a few tablespoons of milk or cream (or dairy of choice) and butter or oil for richness. Season with salt and pepper to taste, then fold in the chopped chives. Be sure to gently fold and mash to avoid turning the potatoes gummy or sticky. Garnish the tops with reserved chives and melted better (optional).
