Tender, silky stir-fried eggplant is glazed in Farmhouse Kitchen's house made Tamari Ginger dressing, absorbing the savory taste of tamari, fresh ginger, and a touch of sweetness from locally harvested honey. Fresh-picked basil adds an aromatic layer of warm anise and peppery flavor.

Ready to enjoy in just 15 minutes, this stir fry is great for weeknight cooking and Meatless Mondays. Mushrooms, peppers and bok choy are hearty additions, as are fried tofu, ground pork or chicken, and sliced pork tenderloin or boneless chicken breast.

Serves 4. (Gluten Free, Dairy Free, Nut Free)

Includes*:
  • 1 lb avg Eggplant
  • 1 bunch Green Onions
  • 1 head Garlic
  • 1 bunch Basil
  • 8 oz Tamari Ginger Dressing

You will need:
  • Neutral oil, such as avocado or sunflower
  • Salt and pepper
Hands on Time: 15 minutes; Total Time: 15 minutes

INSTRUCTIONS

STEP 1 
Prepare the vegetables. Chop the eggplant into thin rounds or large batons, about 1/2-inch thick. Chop the green and white section of the onion section into batons, about 2-inches long. Roughly chop or thinly sliver 3-5 cloves of garlic (depending on preference). Pick whole basil leaves. Set vegetables aside.
STEP 2 
Heat a large high-sided skillet or wok over medium-high heat. Add 1 tbsp. oil to coat the bottom of the pan. When the oil starts to smoke, add the eggplant. Season with salt and saute for 3-5 minutes to cook until just tender with charred edges. Eggplant absorbs oil quickly, so you may need to add 1-2 tbsp. more oil as you sauté. 
STEP 3 
Next, reduce the heat to medium and add more oil if the pan appears dry. Add the batons from the white section of the green onion and the chopped garlic. Sauté for 30 seconds or so until fragrant and onions just begin to soften. Be careful to not let the garlic burn. 
STEP 4 
Add about 1/2 cup or half the jar of Tamari Ginger dressing and the remaining green onion batons. Stir to coat and combine well, warming the sauce through. Season with salt, pepper and additional sauce to taste. Turn off the heat, then toss in basil leaves to just wilt and lend their fragrance to the stir fry.

Serve with rice, quinoa or noodles, topping with fresh basil leaves, if desired.
