As a main dish with a side of roasted potatoes or fresh tomato salad, these Feta Mint Lamb Sliders are perfect for serving 4. As an impressive appetizer for your next get together or pot luck, these sliders would happily satisfy 6 to 12 guests.

  • 6 oz Goat Feta Cheese
  • 12 count Challah Pull-Apart Rolls
  • 1 lb avg Cucumbers
  • 1 count Red Onion
  • 1 bunch Fresh Mint
You will need:
  • Oil of Choice
  • Salt & Pepper
  • Tzatziki, Greek Yogurt, Mayonnaise or Other Condiment of Choice (optional)
Hands on Time: 15 minutes; Total Time: 30 minutes

INSTRUCTIONS

NOTE: Thaw ground lamb in the refrigerator 24-48 hours prior to cooking.

STEP 1 
Prepare the vegetables. Peel the cucumbers (optional) and thinly slice into rounds; set aside. Pick mint leaves and finely chop about 1/4 cup; add to a mixing bowl. Trim and peel the onion, then finely mince 1/4 cup; add to bowl with mint. Thinly slice the remainder of the onion. (Note: If desired, submerge sliced onions in a bowl of cool water to remove some of the raw, spicy bite. Drain and pat dry before serving.) 
STEP 2  Add the thawed ground lamb to the bowl with finely chopped onion and mint. Add 1 tsp. of salt and 1/2 pepper. Use your hands to thoroughly combine to evenly distribute the seasonings. Form 12 meatballs, rolling them into your hands for even size. Next, press the meatballs into patties 3 inches in diameter. Set the lamb patties aside.

STEP 3  Heat a large skillet over medium-high. Add oil just to coat the bottom of skillet. When the oil begins to shimmer, work in batches to add the lamb patties, leaving at least 1-inch in between. Cook for 2 minutes or until browned, then flip and cook the second side for another minute or so. The internal temperature of the lamb burgers should reach 160°F. Repeat with remaining lamb patties.
STEP 4 Slice the challah rolls in half, then broil for 2-3 minutes until golden or oil the cut side and toast in a skillet until golden.
STEP 5 Layer the lamb burgers, sliced onion, cucumber, mint and feta cheese on the toasted challah rolls. Top with your condiment of choice - Greek yogurt, mayonnaise, pesto or home made tzatziki.
