Texas gets a taste of tropical Hawaii in this grill-perfect kabob bundle featuring house marinated teriyaki chicken, fresh cut organic pineapple and onions, and a bold Texas-style barbecue sauce. The kebabs are a symphony of flavors - sweet from the pineapple, savory from the onion & teriyaki chicken, sweet & sticky from the barbecue sauce, and smoky as the kebabs caramelizes with each turn on the flame.

Enjoy these kabobs as an appetizer with a little extra sauce on the side for dipping. As a main, pair the kabobs with coconut rice, tangy cabbage slaw or potato salad.

RECIPE

You will need:

  • Oil of Choice

  • Salt & Pepper


Hands on Time: 15 minutes; Total Time: 30 minutes

NOTE:
Thaw chicken in the refrigerator 24-48 hours prior to cooking. If grilling over gas or charcoal, set the heat to medium according to the manufacturers instructions.

STEP 1 
Submerge the skewers in hot water and let sit for at least 30 minutes to help prevent the skewers from burning while cooking.
STEP 2  Meanwhile, prepare the onion. Trim and peel, then chop into large square-shaped pieces, about 1-inch; set aside. 
STEP 3  Next, prepare the chicken. Slice into cubes, about 1-inch pieces; set aside in a bowl.
STEP 4  After soaking the skewers for 30 minutes, prepare the kabobs. Thread the onion, pineapple and chicken onto the skewers. Add 2 pieces of onion, 1 piece of pineapple, and 2 pieces of chicken. Repeat until the kabob is full, leaving about 1/2 inch of skewer exposed on each end.
STEP 5  If grilling, preheat the grill to medium and oil the grates to prevent sticking. Lay the kabobs diagonally on the grates and adjust so that the skewers are flat against the grates as much as possible. Rotate the skewers to evenly cook, about 3-4 minutes per side. The internal temperature of the chicken should read 165ºF when cooked through.
To broil: Set the oven rack to 6-inches below the heating element. Add the kabobs to an oiled, foil lined baking sheet. Cook the kabobs for 3-4 minutes each side, rotating as needed to prevent burning. 
To griddle indoors on a cast iron grill pan: Preheat the pan over medium heat, then lightly oil. Cook the kabobs for 3-4 minutes each side, rotating as needed to prevent burning.
STEP 6  Just before the chicken is cooked through, lightly brush with sauce and continue grilling/broiling. Rotate often to prevent burning until chicken is cooked through. Alternatively, after removing from the grill, brush the hot kabobs with Texas BBQ Sauce with additional sauce on the side for dipping.
