Guajillo is a wild desert bush with little blonde blossoms that is native to Southwestern Texas and Northern Mexico. Guajillo blossoms on the ranch feed honeybees that create Guajillo Honey naturally without the use of chemicals.  Guajillo has an extremely delicate and distinctive taste that is described as very light, mild, rich, smooth and sweet, with a hint of lavender. It has a perfume-like fragrance.

Guajillo Honey is delicious drizzled over anything you like. Mix Guajillo honey with equal parts butter for a delicious honey butter that you can spread over pancakes or other baked goods. Alternatively, equal parts honey and mustard makes a great dip. Use it in a salad dressing for spinach salad with balsamic vinegar, olive oil, dijon mustard, and salt and pepper. Guajillo honey goes great with ground chiles and mustard for a glaze over meat or finishing sauce.
