INSTRUCTIONS

Cooking Notes: Thaw the beef and massaman curry in the refrigerator 24-48 hours prior to cooking.
An electric pressure cooker (Instant Pot) is suggested for this recipe. The amount of time needed to stew the meat until tender will vary depending on the appliance brand. 

STEP 1  Adjust the Instant Pot to the Saute setting. While it heats, pat the beef dry with paper towels. Cut any larger pieces in half so that all pieces are roughly the same size, about 1-inch. Season with salt and pepper. Sear the beef in oil until browned on all sides.
STEP 2  While the meat browns, slice the onions into large strips, about 1-inch thick. Chop the potatoes and carrots into large pieces, about 2-3 inches in size. The large size allows for the vegetables to cook through at the same time as the beef without falling apart. Add the chopped vegetables to the pot with browned beef. Pour in the massaman curry and stir just until it melts.

STEP
Secure the Instant Pot lid and move the valve to the Sealing setting. Press the Pressure Cook button, then use the +/- button to adjust the time to 25 minutes. The Instant Pot will come up to pressure, then begin cooking for 25 minutes. When the timer on the Instant Pot beeps to signify the end of the 25 minutes, let it sit for 10 minutes without disturbing or releasing the valve. This will allow the Instant Pot to naturally release pressure. 
STEP 4  After 10 minutes of naturally released pressure, manually release the remaining pressure by opening the steam valve. Use a spoon with a long handle to carefully move the valve to the Venting setting. Do not hold your hand or look directly over the valve. Hot, vigorous steam will immediately release. You will know when the pressure is fully released and it’s safe to remove the lid when the valve stops hissing and there is no more visible steam. 
STEP 5  Season with salt and pepper to taste, stirring gently so as to not break up the tender veggies and beef. Serve over steamed rice or grain of choice.
