Description
In this Mexican-inspired meal, wild boar is simmered until fork tender with mild green tomatillo sauce for a quick and easy dinner. Top the wild boar chile verde with chopped onions and fresh cilantro, and serve with stone ground corn tortillas. Prepare this meal in a electric pressure cooker, such as an Instant Pot, or in a slow cooker. Serves 2-3. (Gluten Free, Dairy Free, Nut Free)Includes:
- 1 lb Wild Boar Stew Meat
- 16 oz Mild Green Salsa
- 10 oz Freshly Chopped Onions
- 1 bunch Fresh Cilantro
- 12 ct Non-GMO Stone Ground Corn Tortillas
- Neutral oil
- Salt and pepper
- Lime (optional)
- Cheese (optional)
STEP 1 Pat wild boar dry with paper towels and cut into equal sizes (about 1-inch). Season with salt and pepper. On the Saute setting, brown boar in oil on all sides, then cover with mild green salsa.
STEP 2 Follow manufacturers instructions for sealing the pressure cooker lid and closing the vent. Bring to high pressure and cook for 25 minutes.
STEP 3 Allow the pressure to naturally release for 10 minutes before manually releasing the pressure and carefully opening the lid. Season with salt and pepper to taste.
STEP 4 While the boar is cooking, wash, rinse and dry the cilantro, then roughly chop. Warm the corn tortillas.
STEP 5 Serve the wild boar chile verde topped with chopped onion and cilantro with warm tortillas. Add a squeeze of lime and crumbled cheese, if desired.
NOTE: For slow cooker, cook the wild boar and mild green salsa on high heat for 4-5 hours or on low heat for 6-7 hours. For added flavor, sear the boar and deglaze the pan with salsa before transferring to the slow cooker.
