Austin Seafood Products was originally opened as a family business in June 1989 by Clifford and Anna Mae Elliott of Palacios, Texas. The Elliotts moved to Austin after retiring from their former business, Ed Collins Seafood, a crab meat processing plant in Palacios. To ensure the best quality of product they send their own trucks to the Texas Gulf Coast several days each week to pick up fresh fish including Black drum, Farm-raised redfish, fresh picked Blue Crabmeat, fresh shucked oysters, and other Texas Gulf Coast seafood products.
