For this Mediterranean-inspired sheet pan dinner, Belle Vie's artisan chicken sausage links dotted with sun dried tomatoes, basil & garlic are the perfect pairing with a medley of summer vegetables. Just chop and bake, then sprinkle with hand-crafted goat's milk feta cheese and a squeeze of fresh lemon juice. Enjoy as is or top your favorite pasta or whole grain. Serves 4.

  • 1 count Red Bell Pepper
  • 1 lb avg Summer Squash
  • 1 head Garlic
  • 1 count Red Onion
  • 2 count Eureka Lemon
You will need:
  • Olive Oil
  • Salt & Pepper
Hands on Time: 15 minutes; Total Time: 35 minutes

INSTRUCTIONS

NOTE: Thaw chicken sausages in the refrigerator 24-48 hours prior to cooking.

STEP 1 
Preheat oven to 425°F. Prepare the vegetables. Remove the stem and seeds from the pepper, then chop into 1-inch pieces. Trim and peel the onion, then chop into 1-inch pieces. Slice the squash into 1/2-inch thick coins or half moons. Thinly slice 3-5 cloves of garlic (to taste). Add vegetables to a large, rimmed baking sheet. Drizzle generously with oil and season with salt and pepper. Toss to coat and combine, then spread out in an even layer.
STEP 2  Nestle the chicken sausages on the baking sheet amongst the vegetables, spacing them apart. Drizzle or brush the tops of the sausage with oil.

STEP 3  Roast the sausages and vegetables in the preheated oven for 20-25 minutes or until the sausages are cooked through and reach an internal temperature of 165°F. If desired, broil for 3-5 minutes to brown the tops of the sausage and veggies.
STEP 4  Serve roasted Mediterranean chicken sausages and veggies with a squeeze of fresh lemon.
