This hearty Japanese mushroom variety is a hybrid of oyster and king trumpet. With tender stems and dense, meaty and savory qualities, these mushrooms are excellent roasted or sautéed. Black pearls can be sliced or torn into thick pieces and simmered or braised to develop a tender, meat-like consistency. Frying them to golden brown creates a crispy textural contrast. They will keep 1-2 weeks when stored in a paper bag in the refrigerator.
