You will need:

  • Sour cream or yogurt

  • Whole or refried beans


Hands on Time: 20 minutes; Total Time: 25 minutes

INSTRUCTIONS

Note: Thaw ground beef in refrigerator overnight. 

STEP 1  Dice the tomatoes and set aside. Thinly slice or cube avocados.
STEP 2  Gently heat the chile con queso in a saucepan over medium-low heat until thoroughly hot. Stir occasionally to prevent scorching. Alternatively, add to a microwave-safe bowl and heat 50% power for 3 minutes or until melted, stirring occasionally.
STEP 3  Meanwhile, heat a large sauté pan over medium-high with 2 tsp. oil. When the oil begins to shimmer, add the ground beef and break it up into small crumbles with a wooden spoon. Cook for 8 minutes or until lightly browned. Add about 1/2 cup of diced tomatoes and the taco seasoning spice pack. Simmer for 5 minutes, letting the tomatoes break down and reduce into a sauce. Season with salt and pepper to taste.

STEP 4  Add a single layer of corn tortilla chips on a large baking tray or serving platter. Sprinkle half of the seasoned beef on top, followed by melted queso, chopped tomato, pickled jalapenos, and avocado. Add a layer of whole or refried beans, if desired.
STEP 5  Repeat for additional layers. Customize your nachos with onions, sour cream or yogurt and chopped cilantro, if desired.
