While we love our chips & queso in Texas, what we might love even more is an excuse to enjoy a Texas sized platter of nachos that layer on a rainbow of local, seasonal and freshly prepared ingredients. For the big game or the next movie night, cook up this quick cooking nacho kit. Top crunchy corn tortilla chips with seasoned ground beef, creamy pinto beans, chile con queso, freshly chopped tomatoes and onions, pickled jalapenos, and buttery avocados. Every bite is pure savory, creamy, spicy, salty, and tangy perfection.Pro Tip: This nacho kit would also be great served as a nacho bar or DIY nachos, or as a layered queso compuesto dip with chips on the side.
Serves 6-8 as an appetizer

Includes:
- 1 lb avg Ground Angus Beef
- 16 oz Chile con Queso
- 16 oz Corn Tortilla Chips
- Spicy Taco Seasoning
- 2 ct Organic Avocados
- 1 lb avg Beefsteak Tomatoes
- 16 oz Borracho Beans
- 8 oz Pickled Jalapenos
- 10 oz Chopped Onions
- Salt and Pepper
INSTRUCTIONS
Note: Thaw ground beef in refrigerator overnight.
STEP 1 Dice the tomatoes and set aside. Thinly slice or cube avocados.
STEP 2 Gently heat the chile con queso and borracho beans in separate saucepans over medium-low heat until thoroughly hot. Stir occasionally to prevent scorching.
STEP 3 Meanwhile, heat a large saute pan over medium-high. Add oil, ground beef, and 1/2 cup chopped onions. Break the beef up into small crumbles with a wooden spoon. Cook for 8 minutes or until lightly browned. Add 1/2 cup of diced tomatoes and spice pack. Simmer for 5 minutes tomatoes breaks down and reduces into a sauce. Season with salt and pepper to taste.
STEP 4 Add a single layer of corn tortilla chips on a large baking tray or serving platter. Sprinkle half of the seasoned beef on top, followed by pinto beans, melted queso, chopped tomato, chopped onions, pickled jalapenos, and avocado.
STEP 5 Repeat for additional layers.
