- 8 oz Vegan Cashew Caesar Dressing from The Steeping Room
- 1 loaf Fresh Baked Baguette from Texas French Bread
You will need:
- Salt and Pepper
- Olive Oil
Hands on Time: 10 minutes; Total Time: 20 minutes
INSTRUCTIONS
Note: The salad ingredients can be prepared for a single or multiple servings. You can prepare the croutons in a large batch and store them in an airtight container to enjoy as you please. You can also prepare the lettuce in a large batch and refrigerate in an airtight container. Toss together a single or smaller portions of salad in the dressing as desired throughout the week.
STEP 1 Prepare the croutons. Preheat oven to 400°F. Depending on how many croutons you prefer, you can slice a small section or the whole loaf. Slice the baguette into thin rounds, about 1/3-inch thick or into small cubes, about 1/2-inch pieces. Add to a baking sheet and drizzle liberally with olive oil, and season with salt and pepper. Toss to coat and combine, then spread out in an even layer. Bake in the preheated oven for 10-15 minutes or until crisp and golden brown, turning midway through. Set aside to cool.
STEP 2 While the croutons are baking, prepare the lettuce. Trim the root end from the head of lettuce and discard. Chop into bite sized pieces, about 1 to 2-inch in size. Add chopped lettuce to a large bowl and cover completely with cold water. Swish the lettuce in the water to help release any dirt or grit. Let stand for 2-3 minutes to allow dirt and grit to sink to the bottom before scooping out the lettuce and transferring to a colander. If necessary, repeat washing 1-2 more times to remove all dirt and grit. Then, pat dry with clean kitchen towels or spin dry in a salad spinner.
STEP 3 To serve, add the washed and dried lettuce to a salad bowl or mixing bowl. Add cooled croutons and drizzle with cashew Caesar dressing to taste. Toss with tongs to coat and combine. Adjust with additional dressing, salt and pepper to taste.
Enjoy!
