The Process
Contributing to the incomparable quality of this special holiday cut, master charcutier, Jerry Ater of Austin's flying Pig Provision Co., smokes and cures the meat with careful technique, paying respect to their prize cut. These delectable hams are cured for seven days in a brine of filtered water, kosher salt, dark brown sugar, fresh garlic, and his own special blend of spices. Once perfectly tenderized, the hams are rinsed, dried, and prepared to smoke in a live oak charcoal fire, and finally finished up in a hickory and applewood hot smoke for 12 solid hours until they reach mahogany perfection. 

Ingredients: Water, Kosher Salt, Dark Brown Sugar, Fresh Garlic, Spices

Heating Your Holiday Ham:
1. Preheat your oven to 275F.
2. Slice the amount of ham that you want to serve and place it in a baking dish with 1/4 cup of water. Cover with foil.
3. Place your covered ham in the oven for ten minutes. Keep in mind, you are not cooking it, just reheating it, so the temperature of the ham only needs to get to 140F degrees.
