Is there any dessert more classic than an old-fashioned pumpkin pie? The craving gets strong as soon as there's a chill in the air. Plan ahead and make this simplified version of the classic for the big holiday meal- it holds well for a couple of days while you handle the rest. The buttery, flaky crust and creamy filling are perfect served alongside freshly whipped cream. 

Ingredients:
Pumpkin Pie Filling: pumpkin puree, heavy cream, milk, eggs, brown sugar, cinnamon, ginger, cloves, salt, pie dough (flour, butter, salt)
Pie Dough: flour, butter, salt

Instructions:
  1. Thaw both pie filling and dough in the refrigerator overnight, at least 10 hours
  2. Unwrap dough and place on a lightly floured piece of parchment paper, let sit 10 minutes to slightly warm. Roll dough out to a 12-inch circle, place dough over the pie plate and lightly press into place. Cut off the excess overhang and crimp edges as desired. Place the dough back in the fridge while the oven preheats.
  3. Preheat oven to 350°F with a baking sheet on the middle rack. Bake crust for about 20 minutes until golden in color.
  4. Remove pie crust from oven, add the filling and bake for about 45 minutes until set.
  5. Allow to cool to room temperature or chill overnight. Serve with whipped cream, if desired.
