All tossed with Della Casa Pasta's hand made pasta, house made Rustic Italian Vinaigrette from Farmhouse Kitchen and ribbons of sweet, peppery basil, the salad only gets better over time as the flavors meld.

Excellent served cold or at room temperature, the pasta salad is a springtime essential for barbecues, picnics, potlucks and pool parties. Serve it as a main dish paired with grilled fish or chicken, or add it to a buffet of sides to feed a crowd.

  • 8 oz Smoked Mozzarella Cheese
  • 10.2 oz Castelvetrano Olives
  • 1 lb avg Zucchini
  • 1 pint Grape Tomatoes
  • 1 bunch Italian Basil
  • 10 oz Sliced Peppers & Onions
  • 8 oz Rustic Italian Vinaigrette

INSTRUCTIONS

Note: Keep pasta frozen until immediately before cooking.

TEP 1  Preheat oven to 425°F and bring a large pot of water to a boil. Meanwhile, chop the zucchini into 1-inch pieces; add to a large baking sheet. Add sliced peppers & onions to zucchini. Drizzle veggies with olive oil, salt and pepper. Toss to combine and spread out in an even layer. Roast for 10-12 minutes or until caramelized and brown, but crisp tender. Set aside to cool.
STEP 2  When the water reaches a boil, add 1 tbsp. of salt followed by pasta. Stir with tongs or a wooden spoon to break up and prevent sticking. Boil pasta for 3-4 minutes or until al dente (when the pasta is tender, but retains a pleasant chew), then drain in a colander and rinse with cold water to stop the cooking. Shake off as much excess water as possible, then add cooled pasta to a mixing bowl.
STEP
Halve tomatoes and olives. Chop smoked mozzarella into small cubes. Roughly chop or tear the basil. Add to mixing bowl with cooked pasta and roasted veggies.
STEPShake the Rustic Italian Vinaigrette well before combining with pasta, cheese, basil and veggies. Season with salt and pepper to taste.

Enjoy at room temperature or cover and store overnight in the refrigerator to serve chilled.
