You can't beat the perfect pairing of juicy strawberries with rich, sweet cream sandwiched between buttery, flaky biscuits. This quick & easy dessert kit includes 4 simple ingredients: ready-to-bake flaky biscuits from Austin's own Epicerie, lightly sweetened whipped cream, fresh organic strawberries and a little lemon juice and zest for brightness. Don't sleep on the opportunity to enjoy this sweet treat - it's an absolute must-have during Texas strawberry season. 

Includes:
  • 6 ct Epicerie Biscuits, frozen
  • 7 oz Whipped Cream, Can
  • 1 lb avg Organic Strawberries
  • 2 count Eureka Lemons

You will need:

  • Sugar
  • Salt (optional)
  • Butter (optional)
  • Demerara Sugar (optional)

Hands on Time: 10 minutes; Total Time: 60 minutes

INSTRUCTIONS

STEP 1 Macerate the strawberries. Wash and hull the strawberries. Halve or quarter, depending on size. Add strawberries to a mixing bowl with 1/2 cup of sugar (adjust sugar to preference), a pinch of salt, finely zested lemon to taste and juice of half a lemon. Stir to combine. If desired, gently press the strawberries with a fork or potato masher to help release juices. Let sit for 30 minutes to an hour, stirring occasionally. The longer it sits, the more juice will release.
STEP 2 
Preheat oven to 400°F. Line a large baking sheet with parchment paper. Melt 3 tbsp. butter. Add frozen biscuits to the prepare baking sheet. Brush the butter on all sides of the biscuits, then sprinkle with demerara sugar. Bake the biscuits in the preheated oven for 12-15 minutes or until golden brown all over. Remove from oven and set on a baking rack to cool.
STEP 3 To serve, split open the cooled biscuits as evenly as possible to create a top and bottom half. Add the bottom half to serving plates. Spoon a generous portion of macerated strawberries and the juices on the biscuit. Top with whipped cream and the top half of the biscuit. Alternatively, create strawberry shortcake trifles by layering broken biscuit pieces with strawberries and whipped cream.
