Sun dried tomatoes pack a ton of flavor, balancing intense umami savoriness with chewy sweetness. In this Mediterranean-inspired recipe, the concentrated flavors of the sun dried tomatoes are ideal for infusing Farmhouse Kitchen's white wine cream sauce with an unmatched savory tomato flavor. Seared pasture-raised chicken breast and tenders lock in juices, while the golden brown caramelized bits in the pan melt into the sauce as it simmers into a rich gravy. A shower of freshly torn Italian basil is the perfect finishing touch.

  • 1 lb avg Pasture-raised Boneless Chicken Breast with Tenders, frozen
  • 3 oz Sun Dried Tomatoes
  • 16 oz White Wine Cream Sauce, frozen
  • 1 Garlic Bulb
  • 1 bunch Fresh Basil
You will need:
  • Oil of choice
  • Salt & Pepper
Hands on Time: 15 minutes; Total Time: 25 minutes

INSTRUCTIONS

NOTE:
Thaw chicken and white wine cream sauce in the refrigerator 24-48 hours prior to cooking.

STEP 1 
Prepare the vegetables. Thinly slice 3-5 cloves of garlic (to taste). Roughly chop the sun dried tomatoes. Pick, wash and dry basil leaves. Do not chop or tear basil until immediately before serving. Set aside. 

STEP 2  Pat the chicken dry with paper towels. Season both sides with salt and pepper; set aside.
STEP 3  Heat a large sauté pan over medium. Add oil to coat the pan, then add chicken breast. Let sear for 3-4 minutes until golden brown, then flip and continue browning the second side. At this point the chicken breast will not be completely cooked through. Transfer the chicken breast to a clean plate. Cook the tenders for 1-2 minutes per side until cooked through, then transfer to plate with chicken breast. 
STEP 4  Reduce heat to medium-low, then add oil and sliced garlic. Saute for a few seconds until just aromatic, being careful to not over brown or burn. Add the sun dried tomatoes and white wine cream sauce. Stir to combine, then nestle in the chicken breast. Simmer uncovered for 5 minutes or until sauce is reduce by half and the chicken is cooked through. The internal temperature of the thickest part of the chicken breast should reach 165°F. Add the chicken tenders and any collected juices in the plate. Simmer for 1 minute to warm the tenders through, and adjust seasoning with salt and pepper.
STEP 5  Roughly chop or tear the basil and sprinkle over the chicken and sauce. Serve with pasta, quinoa, rice or crusty bread and a side of steamed or roasted veggies.
