These Asian-inspired shrimp skewers stack wild-caught Gulf shrimp with a medley of crisp-tender summer vegetables. Whether you marinate, glaze, dip, or all of the above, Farmhouse Kitchen's house made Tamari Ginger Dressing adds a savory and tangy balance of spicy fresh ginger, sweet honey and umami-rich tamari that complement the char-grilled skewers. Serves 4-6 as a main or appetizer.

  • 1 lb avg Summer Squash
  • 1 count Red Onion
  • 1 count Red Bell Pepper

Hands on Time: 15 minutes; Total Time: 30 minutes

INSTRUCTIONS

NOTE: Thaw shrimp in the refrigerator 24-48 hours prior to cooking. If grilling over gas or charcoal, set the heat to medium according to the manufacturers instructions.

STEP 1 
Submerge the skewers in hot water and let sit for at least 30 minutes to help prevent the skewers from burning while cooking. Meanwhile, prepare the vegetables. Trim and peel the onion, then chop into large pieces, about 1-inch. Remove the stem and seeds from the bell pepper, then chop into large pieces, about 1-inch. Halve the mushrooms or leave whole, depending on size. Chop the zucchini into 1/2-inch thick rounds or half moons. Add to a mixing bowl and drizzle with oil, and season with salt and pepper. Set aside.
STEP 2  Peel and devein the shrimp, leaving the tails in tact for presentation if desired. Pat the shrimp dry, then drizzle with oil and season with salt and pepper. Set aside.

STEP 3  Thread the vegetables and shrimp on the bamboo skewers, alternating the vegetables as desired. When threading the shrimp, curl the shrimp into a U-shape, then pierce through one end of the U-shape to the other end in order to secure it.
STEP 4  If grilling, preheat the grill to medium and grease the grates to prevent sticking. Lay the skewers diagonally on the grates and adjust so that the skewers are flat against the grates as much as possible. Close the lid and cook for 2-3 minutes or until lightly charred and orange-pink. Turn the skewers over and continue grilling until the shrimp are opaque-white and cooked through (145ºF). Alternatively, set oven to broil and cook 3-5 minutes each side or griddle indoors on a cast iron grill pan over medium heat for 3-4 minutes per side.
STEP 5  Serve hot, brushed with tamari ginger dressing or on the side for dipping.
