16 oz Thai Fresh Red Curry Sauce
8 oz Gulf Pacific White Rice
8 oz Village Farms Cherry Tomatoes

You Will Need:
Canola, Olive or Other Neutral-Tasting Oil
Salt & Pepper

Instructions:
Serves 3-4
Active Time: 15 minutes

Total Time: 25 minutes

  1. In a small pot, bring 2 cups of water to a boil. Add rice, stir, cover, and reduce heat to low. Simmer lightly for 20 minutes, remove from heat. Set aside, covered, for 10 minutes.
  2. Peel shrimp. Halve the tomatoes and slice zucchini into half moons or rough pieces.
  3. In a high-sided skillet over medium heat, add 1 tablespoon of oil and saute vegetables until soft (about 5 minutes). Add shrimp and cook for 2 minutes. Season the mix lightly with salt and pepper.
  4. Add curry sauce, stir, and bring to a simmer. Serve over rice.
Recommended Sides:
This dish actually works really well as a single-dish meal, so adding extra produce to the curry is always a safe bet if you want to keep it simple - green beans, sweet potato, okra, onion, and eggplant are all great add-ins. If you do want a side however, we love a light spring roll, filled with carrot, cucumber, vermicelli, fresh herbs, and avocado, Thai-style chicken wings, or thinly sliced cucumber marinated in shallot, Thai chili, and lime juice.

Feel free to dress up your curry sauce with more than just extra veg - adding lime zest or juice, extra coconut to mellow the flavor, a few dashes of fish sauce, or Thai chilis for extra heat can be an easy way to tailor your curry sauce to your own taste.
