Ideal for homemade Bolognese, on pizzas, or grilled and served in semolina buns with roasted peppers and onions. They take pride in pasture-raising their own prized heritage pork, then curing their carefully raised meats to create thoughtful and unique sausages, salamis, and charcuterie, taking as long as 3 years to cure some of these expertly-made creations.
