Muscovy is also much leaner, so your roasting duck won't render nearly as much fat as other breeds, making it a leaner, less greasy, lower fat and lower calorie duck.

To cook, preheat oven to 475F. Roast duck, breast side up, for 20 minutes. Turn down the oven temperature to 400F and roast until the bird is cooked through, approximately 45-60 minutes. For an extra juicy and flavorful bird, we always recommend brining your duck for 12-24 hours before cooking.
