In the mid-1800s, Wilhelm and Mina Kramer emigrated to the US from what was then Prussia. They built a sturdy wood frame house, worked the land, and raised a family at a time when Texas was still very much a wild frontier. Now owned and operated by Carolyn and Sam Moffett and their family, Shirttail Creek Farm remains completely intact after more than 150 years and sits on the rolling Blackland Prairie just outside Brenham, TX, about halfway between Austin and Houston. Shirttail Creek Farm endeavors to run their farm in the most simple, environmentally friendly manner possible. As such, they do not spray their pastures with chemical herbicides or pesticides. They also do not use hormones, preventative antibiotics, or steroids on their animals. Their goal is to raise chickens that are free to live the life of a chicken so their hens are 100% pasture-raised. The chickens enjoy a NON GMO diet with no corn or soy. Sam Moffett shared with us why they started farming. “As our eyes opened to the many problems that exist in our food system as well as the the plentitude of disinformation that informs the food buying decisions of so many of us we wanted to make a positive change by producing real, unadulterated food and giving people the option to buy from the farm instead of the supermarket. We produce good, clean, REAL food for our community while improving our environment along the way. We leverage regenerative farming practices like managed intensive grazing, cover cropping, and rotating animals in a complementing style for every other operation on the farm. This production model isn't efficient, and it's a lot of work, but it yields the best eggs and meat you can find!”
