After growing up around farming, food preservation and hospitality, Elias decided to move to Switzerland, to stage at Wildhaus under master chef Annegret Schlumpf. It completely altered his experience with food, in particular the art of charcuterie and meat making. When preparing to leave he feared leaving behind the carefully crafted handmade food he had enjoyed. From this experience came his dream of making meat in the Old World traditions he'd learned abroad. Joined by his wife, sister and niece Elias seeks to revolutionize the industry through a new sourcing model, focused on regenerative agriculture and building healthy communities. Olympia Provisions partners only with GAP certified farms. The GAP team is composed of research scientists with backgrounds in production farming and animal husbandry.
