Crunchy Celery & Apple Salad with Pecans & Lemon Vinaigrette
Serves 4 | Ready in 15 minutes
Light, zesty, and full of texture, this refreshing salad makes Texas-grown celery the star. Perfect as a side for grilled meats or a crisp addition to your lunch spread.
Ingredients:
4–5 ribs Texas-grown celery, thinly sliced
1 crisp apple (like Honeycrisp or Pink Lady), matchsticked or thinly sliced
¼ cup chopped Texas pecans, toasted
2 tbsp chopped fresh parsley or celery leaves
2 tbsp Olive Oil
1 tbsp lemon juice
1 tsp Keepers Harvest Raw Cotton Honey
Salt & pepper to taste
Optional: shaved cheese or a pinch of red pepper flakes
Instructions:
Make the Dressing:
In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
Toss the Salad:
In a large bowl, combine celery, apple, pecans, and parsley. Drizzle with dressing and toss until evenly coated.
Serve:
Garnish with optional cheese shavings or red pepper flakes. Serve chilled or at room temp.
