Unlike the Fuyu persimmon varieties that can be eaten when firm, Tamopan persimmons are of the astringent variety and must only be eaten once fully ripened and soft. We bring these local, super-seasonal fruits in under-ripe, as when they're fully ripe they get crushed very easily and can't be transported. Give them a little time on the counter and they'll yield to jammy, caramelly, perfection.
