Recipe
Texas Onion & Cheddar Cornbread

Serves 6–8 | Ready in 35 minutes

Golden, savory, and packed with caramelized onion flavor, this cornbread is perfect as a side dish or centerpiece for any Southern-inspired meal.

Ingredients:
1 large Organic Texas 1015 Yellow Onion, thinly sliced

1 tbsp Olive Oil or butter

1 cup cornmeal

1 cup all-purpose flour

1 tbsp baking powder

½ tsp salt

1½ cups Fronks Nut Milk or buttermilk

1 large Pasture-Raised Egg

¼ cup melted butter or olive oil

1 cup grated Cheddar

Optional: fresh thyme or jalapeño slices for a kick

Instructions:

Caramelize the Onion:
In a cast iron skillet, heat oil or butter over medium heat. Add sliced onion and a pinch of salt. Sauté for 8–10 minutes, stirring occasionally, until golden and soft. Remove onions and set aside. Wipe out skillet and lightly grease it.

Preheat Oven:
Preheat to 400°F.

Mix the Batter:
In a large bowl, whisk together cornmeal, flour, baking powder, and salt. In a separate bowl, mix nut milk, egg, and melted butter or oil. Combine wet and dry ingredients, then fold in cheese and caramelized onions.

Bake:
Pour batter into skillet and smooth the top. Bake for 20–25 minutes, until golden brown and a toothpick comes out clean.

Serve:
