Roasted Texas Red Onion & Herb Galette

Serves 4–6 | Ready in 45 minutes

Flaky, savory, and packed with sweet roasted onion flavor, this galette is a celebration of Texas-grown red onions with a buttery crust and fresh herbs.

Ingredients:
2 large Organic Texas Red Onions, thinly sliced

1 tbsp Olive Oil

1 tsp salt

½ tsp black pepper

1 tsp balsamic vinegar

1 tsp chopped fresh thyme or rosemary

1 sheet puff pastry or your favorite pie dough

¾ cup Soft Cheese, Ricotta, or Goat Cheese

1 Farmhouse Delivery Egg, beaten (for egg wash)

Optional: microgreens, arugula, or hot honey for serving

Instructions:
Preheat & Prep:
Preheat oven to 400°F. Line a baking sheet with parchment.

Sauté the Onions:
In a skillet over medium heat, warm olive oil. Add red onions, salt, pepper, and herbs. Cook for 10–12 minutes, stirring often, until onions are softened and starting to caramelize. Stir in balsamic vinegar and remove from heat.

Assemble the Galette:
Roll out pastry dough into a 10–12" circle. Spread cheese in the center, leaving a 1½–2" border. Top with sautéed onions.

Fold & Bake:
Gently fold the edges of the dough over the filling, pleating as needed. Brush the crust with beaten egg. Bake for 25–30 minutes, until golden brown and crisp.

Serve:
Let cool slightly. Top with fresh greens or a drizzle of hot honey for contrast. Slice and serve warm or at room temp.
