Turmeric-Sage Breakfast Bowls with Roasted Sweet Potato & Jammy Eggs

Serves 2 | Ready in 30 minutes

This nourishing, golden-hued bowl features seared turmeric-sage sausage, roasted sweet potatoes, sautéed greens, and a jammy egg—finished with a tangy yogurt drizzle and fresh herbs for brightness.

Ingredients:
For the Bowl:

1 package Three Six General Turmeric & Sage Breakfast Sausage

1 medium sweet potato, cubed

1 tbsp Texas Olive Oil

2 cups kale or spinach, roughly chopped

2 eggs

Salt, pepper, smoked paprika (for the sweet potatoes)

For the Yogurt Drizzle:

¼ cup yogurt or plant-based alt

Juice of ½ organic lemon

1 tsp olive oil

Pinch of salt and optional turmeric

To Garnish:

Chopped parsley or mint

Optional: toasted pepitas or sesame seeds

Instructions:
Roast the Sweet Potatoes:
Preheat oven to 425°F. Toss cubed sweet potato with olive oil, salt, pepper, and a pinch of smoked paprika. Roast for 20–25 minutes, flipping once, until golden and tender.

Cook the Sausage:
In a skillet over medium heat, sear sausage for 3–4 minutes until browned and fully cooked through. Set aside.

Sauté the Greens:
In the same skillet, wilt greens for 2–3 minutes with a pinch of salt. Add a splash of water or lemon juice to deglaze and lift any browned bits from the pan.

Make Jammy Eggs:
Bring a pot of water to a gentle boil. Lower eggs in and simmer for 7 minutes. Transfer to an ice bath, peel, and slice in half.

Mix the Yogurt Drizzle:
Whisk yogurt with lemon juice, olive oil, turmeric (optional), and a pinch of salt. Thin with a little water if needed for drizzling consistency.

Assemble:
In bowls, layer roasted sweet potatoes, sautéed greens, and sausage. Top with halved eggs, drizzle with yogurt sauce, and finish with fresh herbs and seeds.

Optional Add-ons:
Add rice or quinoa for a heartier version

Swap sweet potato for roasted carrots or delicata squash in fall
