Recipe
Texas Lonestar Sausage & Sweet Potato Hash with Charred Onion
Serves 2–3 | Ready in 30 minutes
This rustic skillet hash layers smoky-sweet flavors with wild boar sausage, caramelized onions, sweet potatoes, and fresh herbs. Perfect for breakfast-for-dinner, brunch, or a hearty lunch.
Ingredients:
1 package Force of Nature Wild Boar & Beef Lonestar Sausage Links, sliced into ½” rounds
1 large sweet potato, diced small
1 yellow onion, sliced
1 tbsp Texas Olive Oil
1 tsp smoked paprika or ancho chile powder
Salt & black pepper to taste
Optional: 2 eggs, cooked your way
Garnish: fresh parsley, hot sauce, or a squeeze of lime
Instructions:
Cook the Sweet Potatoes:
In a cast iron or heavy skillet, heat olive oil over medium. Add diced sweet potatoes and a pinch of salt. Cook, stirring occasionally, until golden and tender—about 10–12 minutes.
Add Onion & Caramelize:
Push potatoes to the side of the pan and add sliced onions. Cook until soft and beginning to caramelize, 5–7 minutes. Stir everything together.
Sear the Sausage:
Add sliced sausage to the skillet and cook until browned and crisped on both sides, about 6–8 minutes. Stir in paprika or chile powder for depth.
Finish & Serve:
Top with fried or poached eggs if using. Garnish with chopped parsley, cracked pepper, and a hit of hot sauce or lime juice.
Optional Add-ons:
Add roasted poblanos or jalapeños for heat
Stir in chopped greens (kale, chard) at the end
Serve with tortillas or warm toast
